Water Kefir

The real inspiration for me came from wanting an alternative beverage choice vs bottled water or fruit juice. I didn't intend to position water kefir as a a "health" drink (even though that is exactly what it is!), I wanted Single Bath Water Kefir to be an affordable every day drink. Drink it because its good and not just because its good for you! I drink it every day and have noticed a variety of benefits.
What is Water Kefir?
Very simply, its fermented water!
Think of an old fashion soda (minus any added sugar except a small amountn for fermentation purposes), a fermented water based drink that is naturally carbonated - and its DRY.
Water kefir has similar probiotic attributes to milk kefir and its Vegan friendly.
WHAT ABOUT SUGAR??
I use a small amount of organic sugar (about a tablespoon per litre), which is required for fermentation purposes. During fermentation the grains consume the sugar (think of a white wine which ferments dry), leaving behind a bone dry, slightly fizzy drink that is 99% sugar free.
**NO Sugar is added Post Fermentation**


Is it artifically carbonated? NO!
There is nothing artifical in any of my kefirs. The carbonation is a by product of the fermentation process. One of the key reasons at the moment for the plastic bottles is so you can better gauge how carbonated each bottle is based on the firmness of the bottles. A very hard bottle means open slowly and gently. If you want your kefir to fizz up - simply leave it on the countertop over night and by morning - the bottle should have firmed up. But please remember... its a natural product that I don't manipulate in any way - each bottle truely comes from a "Single Batch".

"My Fancy" ???
Well this is a little bit of my dry sense of humour coming out. I encourage everyone to "play" and experiment with flavouring their water kefir and "My Fancy" is basically a way for me to do this! It is whatever flavour I fancy making this week! It might be seasonal and it might just be inspriational - you will have to see.
